With the help of friends and family we are all ready for the sap to begin flowing. The tubing has been repaired, the trees have been tapped, and the evaporator is ready to be fired up. The waiting game now begins. The fluctuation in temperature from above freezing during the day and below freezing at night is important in priming the trees. This temperature cycle throughout late winter and early spring during the months of February, March, and April is what causes the sap in the trees to flow. With the weather so unpredictable you never know when that first sign of maple season will be!
