Emerson's Maple Apple Pie


Pastry
1 1/4 Cups Flour

1/2 Cup Butter

1 Tsp. Granulated sugar

1/4 Tsp. Salt

3-4 Tbsp. Cold water

Filling
3/4 Cup Granulated sugar

1/4 Cup Emerson's Granulated Maple Sugar

1 Tsp. Cinnamon

8 Cups Tart apples, peeled, & sliced

Crumb Topping
1/2 Cup Granulated sugar

1 Cup Flour

8 Tbsp. Butter, softened & cut into small pieces

2-4 Tbsp. Emerson's Granulated Maple Sugar

Pastry: Mix all pastry ingredients expcet water until mixture resembles cornmeal. Slowly add water until mixture forms a ball. Roll out dough, place in 9-inch pie plate and chill.
Filling: Combine granulated sugar, Emerson's Granulated Maple Sugar, cinnamon, and apples. Let stand for 10 minutes. Add filling to chilled pie crust.
Crumb Topping: Mix granulated sugar and flour, add butter pieces until crumbly. Sprinkle over apples. Sprinkle Emerson's Granulated Maple Sugar over topping. Cover edges with foil and bake at 375 deg. for 45-60 minutes or until bubbly.




Homemade Maple Nut Ice Cream
Our grandaughter's favorite treat

4 Eggs

1 Cup Emerson's Maple Syrup

1 Cup Emerson's Granulated Maple Sugar

3 Cups Heavy whipping cream

5 Cups Milk

First beat the eggs until light. Add the sugar gradually. Beat the sugar and egg mixture until thick. Then freeze ice cream until it has a thicker consistency.




Maple Baked Apple

1 Large apple of choice (cored) - Cortland and MacIntosh are our favorites

3-4 oz. Emerson's Maple Syrup

1/2 tsp. Ground Cinnamon

Place the cored apple in a microwaveable safe bowl, fill apple with Maple Syrup, and top with cinnamon. Mircowave for approximately 5 minutes or until the apple is thoroughly cooked. Top with vanilla ice cream. Serve warm.




Maple Cheesecake

16 oz. Cream cheese

3/4 Cup Emerson's Granulated Maple Sugar

2 Eggs

1 tsp. Emerson's Maple Syrup

2 tsp. Lemon juice

Mix all the ingredients above. Pour into a cheesecake pan. Bake at 350 deg. for 30-35 minutes.




Homemade Maple Whipped Cream

2 Cups (16 oz.) Heavy whipping cream

1/4 - 1/2 Cup (to preferred taste) Emerson's Maple Syrup

Or 1/2 Cup Emerson's Granulated Maple Sugar

First whip the cream and then fold in the Maple product you prefer to use. This is a treat any time of the year. The unique color and light flavor of Maple Whipped Cream makes it versatile for any table.

Maple Substitution Rules

Use 1/2 Cup of Emerson's Maple Syrup in place of 1 cup of
white cane sugar, subtract a 1/4 of other liquid.

Use 1/2 - 3/4 Cup of Emerson's Granulated Maple Sugar
for every 1 cup of white cane sugar.


Now you can make any of your favorite recipes have that delicious maple flavoring by substituting white cane sugar with your prefered maple product.




The Master Cleanser
For those interested in cleansing to build positive health:

2 Tbsp. Organic lemon juice (1/2 of a lemon)

2 Tbsp. Emerson's Grade B Maple Syrup

1/10 tsp. Cayenne Pepper

Spring or Purified water - medium-hot

Place first three ingredients in 10 oz. glass. Fill glass with medium-hot water. Drink 6 to 12, 10 oz. glasses per day. (This cleanse is given solely as a suggestion.
